How Do Induction Hobs Work?
Induction hobs work by using magnetic coils underneath the surface which quickly move back and forth when switched on. The magnetic energy gets transferred through to the pan, turning your pan into the heat source to cook your food (and not your cooktop). This is why you can only use pans that are made of metals which stick to magnets.
Most pans that are designed for use on induction hobs are made of either stainless steel, enamelled steel or cast iron. They will also have a completely flat base, as this helps them properly conduct the magnetic field that’s needed to heat up the pan.
Pans that are solely made from copper, aluminium, terracotta, pyrex or any other non-magnetic substance will not work on an induction hob, unless they have additional layers of magnetic metals added to the bottom. Always check your new cookware for the induction symbol before buying.
If you’re not sure which pans will work on an induction hob, try sticking a magnet to the bottom of the pan. If it sticks, it’ll work on an induction hob. If it doesn’t, it won’t work.
Induction Hob Advantages
As with all things, there are pros and cons to buying an induction hob. Here’s a list of reasons why you might want to consider buying an induction hob.
1. They cook food faster than any other type of hob
Because induction cooking turns your pan into the heat source, your food will cook faster than it will on any other type of hob. Heat is often wasted on ceramic and gas hobs, but it will not be on an induction hob.
In fact induction cooking is so efficient that it will roughly half the amount of time it takes other hobs to boil water. And in some cases will even be faster at boiling water than your kettle.
2. They’re the most energy-efficient type of hob
Induction hobs are more efficient than any other type of hob for the same exact reasons they cook food faster.
When you use any other type of hob, you are using a heat source to heat up your pan. This results in a significant amount of heat being lost around the pan in the process.
When you use an induction hob, your pan is the heat source. And so there is little wasted energy when cooking.
3. They are easier to clean and make less mess
Induction hobs definitely have the upper hand when it comes to ease of cleaning. They are literally just a flat sheet of glass and so all you need to do is simply wipe them over with some soapy water and a cloth to get them back to being sparkling clean.
But the real thing that makes these hobs so special when it comes to cleaning is that they make less mess. Because unlike other types of hob, these don’t really get very hot. And so food is less likely to burn onto the surface.
4. Children are less likely to burn themselves on induction hobs
Because there is no naked flame or any real heat coming from the hob, children are less likely to be injured from burns when you have an induction hob.
Gas and ceramic hobs will typically stay hot for a long period of time after you have finished using them. Whereas induction hobs will cool down very quickly once you remove the pan from the plate.
Caution still needs to be taken with children being around induction hobs, but it’s always a positive in our eyes to eliminate some of the risks.
Induction Hob Disadvantages
Here are a list of reasons why you might not want to consider buying an induction hob for your home.
1. They’re more expensive than any other type of hob
Induction hobs are currently the most expensive type of hob available. And although you will save money in energy efficiency, you may be better off with another type of hob if price is the main concern.
2. They need to be installed by a qualified electrician
Installation of induction hobs is a little bit more tricky than some of the other types. And so you will need to hire a qualified electrician to perform the installation.
3. They require special pans
Because induction hobs work through magnetism, your pans need to have a magnetic base. And so your current pans may not be compatible with an induction hob. This can be quite costly for those who have to go out and completely replace their cookware.
